Impossibly Easy Chicken & Broccoli Pie
I totally love Bisquick, I actually use the generic, I think it is called Krusteaz, and it works like a dream. If you have not tried the Impossibly Easy pie recipes from the "Bisquick" website. I highly recommend the recipes, it makes for some tasty frugal cooking and the left-overs are fabulous for my lunches.
1 box (9 oz) Green Giant® frozen broccoli cuts, thawed, drained
1 1/2 cups shredded Cheddar cheese (6 oz)
1 cup cut-up cooked chicken or 2 cans (5 oz each) chunk chicken, well drained
1 medium onion, chopped (1/2 cup)
1/2 cup Original Bisquick® mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
1.Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Sprinkle broccoli, 1 cup of the cheese, the chicken and onion in pie plate.
2.In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate.
3.Bake 35 to 38 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 1 to 2 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

Saving Money on Halloween
I am totally saving a ton on Halloween this year.... I am not having it. I did buy some candy for the trick-or-treaters, to be passed out by whomever happens to be at home. I will be out of town for work on this day, and away at training for 2 days. I really have mixed feelings as I do enjoy dressing up and passing out the candy. But at the same time with that devastating financial blow, it is actually a blessing.
Making the Most of Every Dollar
I have pretty much recovered from what-ever ailments I was suffering from....and now I am suffering from a money ailment. I got hit with a 407.00 bill that I was not expecting. This is going to be a super tough month for me. I must say that the fall canned food sale was such a fabulous idea and I am so glad that I stocked up on what I did. I figure my grocery bill be very minimal...because it has to be. My bills will only get the minimum payment this month, so that I can have gas money to get to work for the rest of the month. It is terribly hard at times to make that paycheck stretch for the entire month. I only have 2 paydays before Christmas and really I am not even stressed. I plan on having a simple Christmas, and already have most of my gifts anyway. Another great feeling of planning ahead. I am trying so very hard to make the most of every dollar, not just this month but always.

Life
I have not been overly creative this week. I am still recovering from my illness, but I have made it to work everyday. So basically this week has just been filled with working and sleeping.
I do know on my days off that I must catch up on housework (if you can actually catch up).
Here is wishing you all a Fabulous & Frugal Day!!!

Shepherd's Pie
Dinner tonight is Shepherd's Pie. I hope there are left-overs for my lunch tomorrow.
Ground beef (or Elk is what I used)
pepper and garlic powder
1 can of tomato soup
2 cans of tomato sauce or 1 big can
1 can of corn drained
1 can of french sliced green beans drained
left over mashed potatoes~ I had left-overs from last night
grated cheddar cheese
brown the burger season to your taste~ drain fat (if there is any) add the tomato soup and 1/2 soup can of water. Stir in the 2 cans of tomato sauce. Mix well and put in a casserole dish or cake pan. Drain the corn and sprinkle over the meat mixture. Drain the green beans and sprinkle over the meat mixture. Drop rounded spoons of the mashed potatoes right on top of the meat and veggies. Top with grated cheddar cheese. Bake uncovered for 25-30 minutes. Broil on hi for about 5 minutes until cheese is bubbly.

Saving The Dollar Bills
I talked to my sister on the phone yesterday, and I was telling her what my plan of action is to save for a cruise to Bermuda next year. I have been saving all of my one dollar bills. I have been doing this since October 1st. I found an old make-up case. The kind you get for free (well probably not free) at the clinique make-up counter, when they have their purchase specials. Anyway it is a green mid size zip up bag, that currently has 26 one dollar bills in it. My hope is that this is an easy way to save up some cash. I don't ever spend my change, so we will see how much I can accumilate.
