Pumpkin Bars with Cream Cheese Frosting

This is a family favorite recipe.... it is easy to make and absolutely delicious....just in time for Thanksgiving.

2 cups all purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon nutmeg (optional)
1/8 teaspoon salt
4 eggs, beaten
1 large can of pumpkin (1 pound 13 oz size)
1 cup vegetable oil

Cream Cheese Frosting
1 3 oz package of cream cheese~ room temperature
2 cups confectioners' sugar
1 teaspoon vanilla extract
6 tablespoons of butter or margarine ~ room temperature
1 tablespoon milk

In a mixing bowl combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.  Stir in eggs, pumpkin, and oil, spread in a greased 15 inch by 10 X 1 inch pan.  (I use a large jelly roll or cookie sheet) Bake at 350 for 30 -40 minutes.  Or until done. Toothpick inserted will come out clean. and cool on wire rack.

Meanwhile, for frosting beat together cream cheese, confectioners' sugar, vanilla, and butter.  Add milk and stir until smooth.  Frost your cooled cake, and cut into squares.   This recipe makes approximately 4 dozen bars.
